PASTA 501 with Domenica Cooks: Showstopper Pasta
SATURDAY, OCT. 3, 12 PM: All homemade pasta is wonderful, but some pastas are truly special. In this rotating class, we will take on a challenging pasta project ~ a showstopper pasta, as I like to call it.
First up: Maccheroni alla Molinara, or “Maccheroni alla Mugnaia” in Abruzzese dialect. This is an extraordinary hand-pulled pasta that comes from the Fino Valley in the Teramo province of Abruzzo. The pasta is made by rolling and stretching a ball of dough into a single, long (and I mean long) loopy noodle. The cooked pasta is dressed with a rustic meat ragù, which we will also be making.
You will receive the recipes as well as a list of ingredients and equipment needed a week before class. The day before class, you will receive an email with a link to the class on Zoom.

All classes take place on Zoom and generally run for 90 minutes to 2 hours. Spaces are limited to 6 to 8 so that everyone can receive the individual instruction necessary to master pasta-making and shaping techniques.
Making homemade pasta can seem daunting but once you get going you’ll be unstoppable!
