PASTA SHOWSTOPPER: Lasagne di Crespelle
Lasagna made with crêpes in place of pasta (lasagne di crespelle in Italian) is a specialty of Abruzzo. It is a showstopping centerpiece, rich and yet, improbably, light and delicate. In this class, we will make and assemble all the components for this dish: crêpes, tomato sauce, and a filling of cheese, mushrooms, and spinach.
You will receive the recipes as well as a list of ingredients and equipment needed a week before class. The day before class, you will receive an email with a link to the class on Zoom.

All classes take place on Zoom and generally run for 90 minutes to 2 hours. Space is limited to 8 people so that everyone can receive the individual instruction necessary to master the techniques. If you’ve never made homemade crêpes before, now is your chance.
